Ponche de crème is the Christmas drink: a rich, creamy punch of eggs, condensed and evaporated milk, rum, a few dashes of Angostura aromatic bitters and plenty of grated nutmeg, served over crushed ice.
Traditionally the eggs are beaten raw with lime peel. This recipe cooks them gently with the milk into a light custard instead, which makes it safe to keep and to share, without changing the taste.
It contains alcohol. For a version children can drink, leave out the rum; it is still rich and festive.

Method
Cook the base
Whisk the eggs with the lime zest in a heatproof bowl until smooth.
Heat the evaporated milk in a pot until steaming, but not boiling.
Pour the hot milk slowly into the eggs, whisking all the time.
Return the mixture to the pot over low heat. Cook, stirring constantly, for 5 to 8 minutes, until it thickens enough to coat the back of a spoon and reaches 160°F (71°C). Don't let it boil, or the eggs will scramble.
Strain into a jug and leave to cool.
Finish
Whisk in the condensed milk, vanilla, bitters and nutmeg, then the rum.
Pour into clean bottles and chill for at least 2 hours.
Shake well and serve over crushed ice, with a little more nutmeg grated on top.
Serve it with
Over crushed ice at Christmas
With black cake, sweet bread or pastelles
Substitutions
Alcohol-free: leave out the rum and add ½ cup (120 ml) cold milk.
Stronger: many families add more rum; add it to taste after chilling.
Storing and reheating
Keep in clean, closed bottles in the fridge and drink within 1 week.
Cook's notes
Contains alcohol unless made without rum.
If the custard looks slightly grainy, blend it for a few seconds before adding the rum.
