Fry ochro is ochro (okra) sliced thin and fried in a little oil until the sticky threads cook away and the slices turn brown and slightly crisp at the edges. Done this way, even people who don’t like ochro often do.
The secret is a wide pan, enough heat, and patience: don’t cover it, and don’t stir too often, so the ochro fries rather than steams.
Dry the ochro well after washing. Wet ochro is much slimier.

Method
Wash the ochro and dry it completely with a clean towel. Trim the tops and slice into thin rounds, about ¼ inch (5 mm).
Heat the oil in a wide frying pan or karahi over medium-high heat.
Add the ochro in an even layer and fry for 10 to 12 minutes, turning every few minutes, until the threads have cooked away and the edges are browning.
Add the onion, garlic and pepper and fry for 5 minutes more, stirring now and then.
Add the tomato and salt and cook for 3 to 4 minutes, until the tomato softens and the pan is dry. Season with black pepper.
Serve it with
Rice and dhal, or roti
With fried or stewed fish
Substitutions
Shrimp: add ½ lb (225 g) seasoned shrimp for the last 4 minutes.
Saltfish: add 4 oz (115 g) desalted, flaked saltfish with the onion, and taste before salting.
Storing and reheating
Best eaten straight away. Refrigerate and eat within 2 days; reheat in a hot pan.
Cook's notes
Pick small, firm ochro that snap cleanly; large ones are woody.
Don't cover the pan: trapped steam keeps the ochro slimy.
